I love mornings.
Without knowing the benefits of healthy diets, mornings can be tough. It can be hard to get through the first hours of your day without wishing you were back under the covers.
This is no ordinary grocery store cookie. Packed with fiber, fruit, nuts, and even ginger, this breakfast cookie will help you come alive in the morning. You can even lose weight and reduce inflammation. And of course, it also tastes good. In fact, it’s delicious!
Ingredients
- ½ cup lightly crushed nuts
- ¾ cup ground almonds, walnuts, or flax seed
- 1 cup almond meal
- ½ cup rolled oats (make sure to use rolled instead of quick or instant oats)
- ½ tsp baking powder
- ¼ tsp unrefined salt
- 2 tsp ground cinnamon
- 1/3 cup dried fruit of your choice
- 1 cup shredded carrots
- 3 tbsp coconut oil
- ½ cup pure dark maple syrup or honey (always avoid corn syrup)
- ¼ cup applesauce or pumpkin puree
- 1 tsp pure vanilla extract
- 1 tbsp grated ginger
Instructions
- Preheat oven to 350F.
- Melt the coconut oil.
- Mix together the dry ingredients.
- Mix together the wet ingredients.
- Mix the wet ingredients into the dry ingredients.
- Using a spoon, scoop 12 cookie rounds onto a parchment paper-lined cookie sheet.
- Bake for 15 minutes and let cool.
